A simple, fast black bean soup that's high in protein, vitamins, and fiber.
Ingredients:
2 cups chicken broth
24 ounce black beans, rinsed and drained
2 carrots, chopped
1 onion, chopped
1 tsp. cumin, ground
1 tsp. ginger, fresh chopped
1 tsp. black pepper
1 tbsp. salt
1/2 c. parsley, chopped
Directions:
1. Combine broth, beans, carrots, onion, cumin, ginger, pepper, and salt in a large saucepan and bring to a boil.
2. Turn heat down and simmer, covered, for 60 minutes.
3. Sprinkle with parsley before serving.
