A simple, fast black bean soup that's high in protein, vitamins, and fiber. Ingredients:
2 cups chicken broth |
24 ounce black beans, rinsed and drained |
2 carrots, chopped |
1 onion, chopped |
1 tsp. cumin, ground |
1 tsp. ginger, fresh chopped |
1 tsp. black pepper |
1 tbsp. salt |
1/2 c. parsley, chopped |
Directions:
1. Combine broth, beans, carrots, onion, cumin, ginger, pepper, and salt in a large saucepan and bring to a boil. 2. Turn heat down and simmer, covered, for 60 minutes. 3. Sprinkle with parsley before serving. |
