Low fat black bean soup Ingredients:
2 cups black beans, organic |
2 cups diced tomatoes, no salt added |
3/4 cup, diced celery |
3/4 cup, chopped onions |
0.49 oz peppers, jalapeno |
2 clove garlic |
1 tsp cumin |
1/4 tsp spices crushed red peppers |
Directions:
1. Combine 3/4 of beans and half of the tomatoes with 2 cups water in saucepan. 2. Bring to a simmer over medium heat. Puree with immersion blender until mostly smooth. 3. Add celery, onion, chile pepper, garlic, cumin, and remaining beans and tomatoes. Season with freshly ground pepper and red pepper flakes. 4. Cover pot, aimmer 20 to 25 minutes. |
