An easy to make, hearty soup that keeps you satisfied for hours. From Brenda Watson's, The Fiber35 Diet. My toddlers like it too! Ingredients:
1 tablespoon olive oil |
1/2 cup celery, diced |
1/2 cup onion, minced |
1/4 cup green bell pepper, chopped |
3 garlic cloves, minced |
1 1/2 teaspoons ground cumin |
1 teaspoon dried oregano |
1 teaspoon chili powder |
1 teaspoon fresh black pepper |
2 cups vegetable broth |
1 cup water |
3 (15 ounce) cans black beans, rinsed and drained |
1 (15 ounce) can diced tomatoes |
Directions:
1. Heat oil in medium stockpot over medium heat. 2. Add celery, minced onion, and bell pepper. 3. Cook about 10 minutes until tender. 4. Add garlic and next 4 ingredients; cook 3 more minutes. 5. Add broth, water, beans, and tomatoes. 6. Bring to a boil; reduce heat, and simmer 15-30 minutes. |
