Ingredients:
2 (15-ounce) cans black beans, rinsed and drained |
1 (6.1-ounce) can mandarin oranges, drained |
1/2 small purple onion, chopped |
1 large green bell pepper, chopped |
1 cup frozen whole kernel corn, thawed |
1 tablespoon chopped pickled jalapeƱo pepper |
1/4 cup vegetable oil |
1/4 cup red wine vinegar |
1/3 to 1/2 cup orange juice |
1/4 teaspoon salt |
Directions:
1. Stir together first 6 ingredients. Whisk oil and next 3 ingredients. Drizzle over bean mixture, and toss. |
