This salsa is great with fish, too. From the American Diabetes Association. canned black beans, red onion, jalapeno pepper, balsamic vinegar, lime juice, garlic, tomatoes, red pepper, cilantro, fresh parsley cvt Ingredients:
15 oz black beans, drained and rinsed |
1/2 cup red onion, chopped |
22 g (1 canned pepper) jalapeno pepper, minced |
2 tbsp balsamic vinegar |
1 tbsp lime juice |
1 tsp garlic cloves, minced |
2 cups tomatoes, chopped |
1 cup red pepper, chopped |
1/2 cup cilantro, minced |
2 tbsp fresh parsley, minced |
Directions:
1. Combine all ingredients and refrigerate 2 hours before serving. |
