This is a pretty yummy salsa recipe that's good over summer break. Serve it at picnics or cookouts. Thanks to the S.L.C.!! Ingredients:
2 fifteen-ounce cans black beans, rinsed and drained |
2 large tomatoes, seeded and chopped |
1 seventeen-ounce can whole kernel corn, drained |
1 large avocado, chopped and peeled |
1 purple onion, chopped |
1/8 to 1/4 cup chopped fresh cilantro |
3 to 4 tablespoons lime juice |
1 tablespoon red wine vinegar |
2 tablespoons olive oil |
1 teaspoon salt |
1/2 teaspoon pepper |
garnishes: avocado slices, fresh cilantro |
Directions:
