This is a pretty yummy salsa recipe that's good over summer break. Serve it at picnics or cookouts. Thanks to the S.L.C.!!
Ingredients:
2 fifteen-ounce cans black beans, rinsed and drained
2 large tomatoes, seeded and chopped
1 seventeen-ounce can whole kernel corn, drained
1 large avocado, chopped and peeled
1 purple onion, chopped
1/8 to 1/4 cup chopped fresh cilantro
3 to 4 tablespoons lime juice
1 tablespoon red wine vinegar
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon pepper
garnishes: avocado slices, fresh cilantro
Directions:
1. Combine first 11 ingredients in a large bowl.
2. Cover and chill.
3. Garnish, if desired, and serve with tortilla chips!
4. Enjoy.....
