Makes a huge batch, can easily be cut in half. Ingredients:
2 (16 ounce) cans black beans, rinsed and drained |
2 (16 ounce) cans white shoepeg corn, drained |
2 (8 ounce) cans rotel tomatoes & chilies |
1/2 red onion, chopped |
6 tablespoons lime juice |
1/2 bunch fresh cilantro |
3 tablespoons oil |
1/2 teaspoon cumin |
Directions:
