Delicious and healthy! From my hero, Paula Deen. Ingredients:
2 (15 ounce) cans black beans, rinsed and drained |
1 (17 ounce) package frozen whole corn, thawed |
2 large tomatoes, seeded and diced |
1 large avocado, peeled and diced |
1 small onion, finely diced |
1/4 cup chopped fresh cilantro leaves |
2 tablespoons freshly squeezed lime juice |
1 tablespoon red wine vinegar |
salt and pepper |
Directions:
1. Mix all ingredients in large bowl. Cover and chill overnight. Taste and season with salt and pepper or more lime juice as necessary. 2. Serve with tortilla chips. |
