Black Bean Salad With Lime-Cilantro Vinaigrette |

A light & refreshing summer salad - takes a little time to get everything chopped, but it's definitely worth it in the end. Ingredients:
2 (15 ounce) cans black beans, drained and rinsed |
3 ears fresh corn, kernels cut off the cob |
1/4 cup diced red onion |
2 red bell peppers, diced |
1 jalapeno pepper, seeded and diced |
1/2 cup cilantro, chopped |
2 tablespoons shallots, minced |
2 avocados, diced |
2 limes, zest of |
9 tablespoons fresh lime juice |
4 tablespoons extra virgin olive oil |
2 garlic cloves, minced |
1/4 teaspoon cayenne pepper |
2 tablespoons sugar |
1 teaspoon cumin |
2 teaspoons salt |
Directions:
1. Combine all ingredients, except avocados, in a large bowl and mix well. Toss with desired amount of dressing. 2. Cover and chill for a few hours or overnight. Right before serving, add avocados and mix gently, being careful not to mash avocados. 3. Serve at room temperature. |
