To allow all the flavors of the Black Bean Salad to develop, make it ahead of time. Ingredients:
1 (15-ounce) can black beans, rinsed and drained |
1 1/2 cups chopped seeded tomato (about |

1/4 cup fresh lime juice |
2 tablespoons olive oil |
1/3 cup chopped fresh cilantro |
2 tablespoons minced shallot |
1 teaspoon minced garlic |
1/2 teaspoon salt |
1/2 teaspoon black pepper |
1/4 teaspoon crushed red pepper |
Directions:
1. Combine all ingredients, stirring well. Cover and let stand 1 hour. |
