Ingredients:
2 cans (15 oz. each) black beans |
2 tablespoons sherry vinegar |
2 tablespoons chopped red onion |
about 2 ounces queso blanco cheese with green chilies and epazote |
Directions:
1. Drain beans. In a bowl, mix beans with vinegar and onion. Thinly shave cheese and mix with salad. |
