Ingredients:
2 tablespoons orange juice |
2 tablespoons lemon juice |
2 teaspoons olive oil |
1/2 teaspoon salt |
1/2 teaspoon ground cumin |
1/2 teaspoon hot sauce |
2 (15-ounce) cans black beans, rinsed and drained |
1 cup cooked long-grain white rice |
3 plum tomatoes, seeded and chopped |
1 red bell pepper, chopped |
1/2 green bell pepper, chopped |
1/2 small purple onion, chopped |
2 green onions, sliced |
1 celery rib, diced |
Directions:
1. Whisk together first 6 ingredients in a large bowl; add beans and remaining ingredients, tossing gently to coat. Cover and chill at least 1 hour. |
