I came up with this recipe as a side-dish for a Mexican meal I made for a friend, in place of a cooked bean dish like refried beans. Ingredients:
1 can black beans, drained and rinsed |
1 cup corn (canned or frozen) |
grape or cherry tomatoes, halved (as many you like or have on hand) |
fresh salsa (see note below) |
red wine vinegar (just sprinkle on a little bit) |
olive oil (same as the vinegar) |
about 1 tsp. sugar |
Directions:
1. Mix all together and let sit a little while before serving. 2. Note: This is best with an uncooked tomato salsa. The stuff you get in a jar in the supermarket will work too, but the flavor of a fresh salsa is really outstanding! I am fortunate to have a local store that makes a really tasty salsa, but if you can find a recipe that uses just tomato, onion, garlic, jalapeno, and lemon/lime juice, all blended in the blender, that would be a good way to go too. |
