I was looking for something different to serve at family picnic's and came up with this. You don't have to worry about it not being refrigerated. Everyone loved it and regularly requests it now. Ingredients:
sm. can chopped green chilis |
2 cans (15.5 oz.) black beans, drained and rinsed |
3/4 cup sliced scallions |
1 1/2 cup fresh or frozen corn |
2 carrots, finely chopped |
2 tomatoes, finely chopped |
1/2 cup olive oil |
juice of 2 lemons |
2 teaspoons salt |
3/4 teaspoon cumin |
3/4 teaspoon chili powder |
2 teaspoons brown sugar |
Directions:
1. Combine ingredients. 2. Chill for 24 hours to allow flavors to mingle. |
