Light and healthy, this quick salad is great the first day and even better the next. Ingredients:
1 can black beans - 15 0z, drained |
1 c corn - fresh or frozen |
8 ea cherry tomatoes, sliced and seeded |
1/2 onion, minced |
2 tsp garlic - minced |
1 ea bell pepper - red, diced |
2 tb pumpkin seeds, chopped |
1/4 c cilantro, chopped |
2 tb olive oil |
3 tb lemon juice - fresh |
salt and pepper, to taste |
Directions:
1. Combine all ingredients and serve. |
