Light and healthy, this quick salad is great the first day and even better the next.
Ingredients:
1 can black beans - 15 0z, drained
1 c corn - fresh or frozen
8 ea cherry tomatoes, sliced and seeded
1/2 onion, minced
2 tsp garlic - minced
1 ea bell pepper - red, diced
2 tb pumpkin seeds, chopped
1/4 c cilantro, chopped
2 tb olive oil
3 tb lemon juice - fresh
salt and pepper, to taste
Directions:
1. Combine all ingredients and serve.
