This salad got great reviews at a dinner I served to a bunch of guests. Perfect side dish for sandwiches or wraps. And very colorful! Ingredients:
2 c. black beans, cooked and drained. |
1 bell pepper, yellow or orange, chopped |
1 small purple onion, chopped |
1 jalapeƱo pepper, chopped |
2 roma tomatoes, seeded and chopped |
1 avocado, chopped (optional) |
1 handful cilantro, chopped |
1 or 2 limes |
salt |
Directions:
1. Combine all chopped ingredients well. Squeeze with lime, salt to taste. |
