This salad got great reviews at a dinner I served to a bunch of guests. Perfect side dish for sandwiches or wraps. And very colorful!
Ingredients:
2 c. black beans, cooked and drained.
1 bell pepper, yellow or orange, chopped
1 small purple onion, chopped
1 jalapeƱo pepper, chopped
2 roma tomatoes, seeded and chopped
1 avocado, chopped (optional)
1 handful cilantro, chopped
1 or 2 limes
salt
Directions:
1. Combine all chopped ingredients well. Squeeze with lime, salt to taste.
