A bean salad redolent with traditional Mexican seasonings. This is great as a salad but can double as a salsa. Ingredients:
1 - 15 oz can of black beans drained and rinsed until the water runs clear |
1 1/2 c. fresh, frozen(thawed), or canned corn kernels |
2 tomatoes diced |
1 red pepper diced |
1 green pepper diced |
1/2 c red onion diced |
2 fresh jalapeno seeded and diced |
1/2 c chopped cilantro |
1/3 c olive oil |
1/3 c fresh lime juice |
1 teas kosher salt |
1 teas cumin |
1 teas new mexico chile powder |
Directions:
1. Diced all the vegetables to a similar size, a little larger than a black beam 2. Combine all the ingredients and toss gently to mix and coat 3. Chill and serve 4. Great as a salad or a salsa |
