summer salad. Cook time is refrigeration time. Ingredients:
2 (1 lb) cans black beans |
1 (1 lb) can corn |
1 (14 ounce) can crushed tomatoes |
1 small green pepper, chopped |
1 small red pepper, chopped |
2 green onions, chopped |
2 tablespoons cilantro |
1/2 teaspoon basil |
1/2 teaspoon oregano |
1 1/2 tablespoons olive oil |
1 1/2 tablespoons balsamic vinegar |
pepper (to taste) |
Directions:
1. Drain beans and corn. 2. Gently mix beans, corn, tomatoes, green pepper, red pepper, green onion, cilantro, basil, oregano and pepper. 3. Whisk olive oil and balsamic vinegar, then pour over mixture. 4. Refrigerate 2 to 6 hours. Serve cold. |
