Black beans have 10x the antioxidants. Than an equal serving of oranges or an equal serving of grapes, apples and creanberries. So come on and get your beans on. Ingredients:
1 (15 ounce) can black beans, rinsed and drained |
1 (15 ounce) can white kidney beans, rinsed and drained |
1/2 cup cucumber, chopped |
1/2 cup sweet pepper, chopped |
1/4 cup onion, chopped |
1/4 cup fresh cilantro, minced |
1/3 cup red wine vinegar |
1/4 cup olive oil |
1/2 teaspoon salt (optional) |
1/4 teaspoon garlic powder |
1/8 teaspoon pepper |
6 lettuce leaves (optional) |
Directions:
1. In a large, bowl combine the beans, cucumber, red pepper, onion and cilantro. 2. In a small boiwl, whisk the vingar, oil and seasonings. 3. Pour over bean mixture and toss to coat. 4. Cover and refrigerate until serving. 5. Using a slotted spoon, serve over lettuce if desired. |
