Ingredients:
16 ounces black beans (1 can)
16 ounces whole kernel corn
1 green pepper, chopped
1/2 cup onion, chopped
1 cup low-fat cheese, grated
1/2 cup salsa
2 tablespoons cilantro, minced
1 tablespoon garlic, crushed
1/2 teaspoon ground cumin
Directions:
1. Place the beans, corn, green pepper, onion, and cheese in a bowl, and mix well.
2. Combine the dressing ingredients in small bowl, and stir to mix.
3. Sprinkle and pour the dressing over the salad, and stir well.
