Ingredients:
16 ounces black beans (1 can) |
16 ounces whole kernel corn |
1 green pepper, chopped |
1/2 cup onion, chopped |
1 cup low-fat cheese, grated |
1/2 cup salsa |
2 tablespoons cilantro, minced |
1 tablespoon garlic, crushed |
1/2 teaspoon ground cumin |
Directions:
1. Place the beans, corn, green pepper, onion, and cheese in a bowl, and mix well. 2. Combine the dressing ingredients in small bowl, and stir to mix. 3. Sprinkle and pour the dressing over the salad, and stir well. |
