If you have leftover bean salad, place it in the blender with a bit of olive oil. It becomes a great dip to serve with crusty bread. Ingredients:
1 (20 ounce) can black beans, rinsed and drained |
2 tablespoons fresh lemon juice |
olive oil |
salt and pepper |
1/4 cup fresh parsley, chopped |
2 -3 garlic cloves, chopped |
dry-cured black olives, pitted and halved |
1 red bell pepper, diced |
1/2 cup goat cheese |
Directions:
1. Toss beans gently with lemon juice, olive oil, salt, pepper, parsley and garlic. 2. Place in serving dish. 3. Garnish with black olives and red pepper for crunch and color. 4. Sprinkle goat cheese over top. 5. Serve at room temperature. |
