BLACK BEAN RICE AND SALSA OMELET This recipe came from an estate sale. I obtained it when I purchased the family collection from the Garcia Estate in Heath, Texas in 1988. Ingredients:
3 eggs |
2 tablespoons warm milk |
1 tablespoon butter |
2 tablespoons black beans |
2 tablespoons cooked wild rice |
2 tablespoons salsa |
Directions:
1. In small bowl mix together eggs and milk. 2. In medium nonstick skillet heat butter over medium heat. 3. Pour in egg mixture and using spatula push cooked egg from the edge into the center. 4. When top is still a little moist spread beans, rice and salsa over top. 5. When eggs are set fold omelet in half and slide onto a serving platter and serve. |
