YUM! Ingredients:
14 ounces black beans, drained |
1 tomato, chopped |
1 bunch cilantro, chopped |
1 (4 ounce) can olives, chopped |
8 tortillas |
2 cups shredded cheese |
1 bunch spinach leaves |
8 ounces salsa |
8 ounces sour cream |
Directions:
1. Mash beans, add tomato, cilantro, & olives. 2. Spread over tortilla, cover with cheese, spinach, and salsa, and top with second tortilla. 3. Bake at 350 F for 12 minutes until cheese is melted. 4. Top with salsa and sour cream. |
