Black Bean, Potato and Spinach Curry |

curry Ingredients:
1 tbsp grapeseed oil |
110 g onion, sliced |
4 g garlic, chopped |
1 tsp grated ginger |
1 tbsp garam masala |
1/2 tsp chili powder |
300 g boiled potatoes |
275 g black beans, drained |
400 g tomatoes, chopped |
100 g spinach |
Directions:
1. Heat the oil, fry the onion garlic and ginger until soft. 2. Stir in the spices for two minutes, then add the potatoes, beans, tomatoes and 150ml water. Simmer for 15 minutes until the sauce has thickened. 3. Stir in the spinach until wilted - serve immediately. |
