Black Bean, Potato and Spinach Curry

Ingredients:
1 tbsp grapeseed oil
110 g onion, sliced
4 g garlic, chopped
1 tsp grated ginger
1 tbsp garam masala
1/2 tsp chili powder
300 g boiled potatoes
275 g black beans, drained
400 g tomatoes, chopped
100 g spinach
Directions:
1. Heat the oil, fry the onion garlic and ginger until soft.
2. Stir in the spices for two minutes, then add the potatoes, beans, tomatoes and 150ml water. Simmer for 15 minutes until the sauce has thickened.
3. Stir in the spinach until wilted - serve immediately.
