Cook-Off Finalist. Ingredients:
1 (15-oz.) can black beans, rinsed and drained |
1/2 cup chopped fresh pineapple |
1 serrano chile pepper or jalapeƱo pepper, seeded and finely chopped |
2 tablespoons seasoned rice wine vinegar |
2 tablespoons orange marmalade |
Directions:
1. Stir together all ingredients in a small saucepan until blended. Cook, stirring occasionally, over medium heat 4 to 5 minutes or until thoroughly heated. |
