BLACK BEAN PINEAPPLE SALSA This recipe came from an estate sale. I obtained it when I purchased the family collection from the Dasher Estate in Arlington, Texas in 2007.
Ingredients:
1 cup fresh pineapple chopped
1 cup canned black beans rinsed and drained
1/2 cup fresh lime juice
1/2 cup chopped fresh cilantro
1 small red onion chopped
1 red bell pepper seeded and chopped
1 green bell pepper seeded and chopped
2 cloves garlic finely chopped
1 fresh jalapeno seeded and finely chopped
1 teaspoon salt
1 teaspoon freshly ground black pepper
Directions:
1. Combine all ingredients in serving bowl and toss to thoroughly combine.
2. Serve immediately or refrigerate 2 hours and serve chilled.
