1 1/2 cups cooked black beans (cooked from dry or canned, drained) |
1/3 cup tahini |
1/4 cup fresh lime juice |
3 tablespoons extra virgin olive oil |
2 garlic cloves, minced |
1/4 cup thinly sliced scallion (white and green parts) |
1/4 teaspoon ground cumin |
Directions:
1. Add the beans, tahini, lime juice, olive oil, and garlic to a food processor fitted with a steel blade. 2. Cover and process until pureed. 3. Add in the scallions and cumin; cover and process until just combined. 4. Variation-add1/4 cup chopped fresh cilantro and Tabasco sauce to taste. |
