BLACK BEAN FIESTA This recipe came from an estate sale. I obtained it when I purchased the family collection from the Boyd Estate in Dallas, Texas in 1987. Ingredients:
1/2 cup olive oil |
6 tablespoons fresh lime juice |
1/4 cup chopped cilantro |
1 teaspoon ground cumin |
4 cups cooked black beans |
2 medium red bell peppers diced |
1 medium red onion diced |
1-1/2 cups cooked corn kernels |
2 jalapeno peppers |
1/2 teaspoon salt |
1 teaspoon freshly ground black pepper |
Directions:
1. In a large bowl mix everything except beans and vegetables. 2. Add beans and vegetables and toss well. 3. Garnish with extra cilantro. |
