Bean, Edamame wheat berry salad Ingredients:
4 cups water |
1/2 cup dry wheat berries |
8 ounces black beans (1/2 can) |
1 cup edamame |
1 cup chopped tomato |
1/2 cup finely chopped red onion |
3 tablespoons extra virgin olive oil |
2 tablespoon red wine vinegar |
Directions:
1. combine water and wheat berries in a medium saucepan, bring to boil; reduce and cover 55 minutes simmering or until wheat berries tender; 2. place in a fine mesh strainer, run under cold water to cool quickly, drain. 3. combine wheat berries with remaining ingredients in a medium bowl, serve immediately or refrigerate for 8 hours 4. servings here are 1 and 1/4 cup 5. 1 cup= 245 grams 6. edamame are frozen, so thaw |
