Black Bean, Edamame and Wheat Berry Salad |

A heathy vegetarian salad to add to salads or eat alone-and its good for you too!! Ingredients:
4 cups water |
1/2 cup dry wheat berries |
1 (15 ounce) can black beans, rinsed and drained |
1 cup frozen shelled edamame, thawed |
1 cup chopped tomato |
1/2 cup finely chopped red onion |
1/2 cup diced red pepper |
3 tablespoons extra virgin olive oil |
2 tablespoons red wine vinegar |
salt and pepper |
1 teaspoon onion powder |
1 teaspoon garlic powder |
Directions:
1. Combine water and wheat berries in a med. saucepan, bring to a boil. 2. Reduce heat and simmer 55 minutes, until wheat berries are tender.Drain in a strainer,run water over wheat berries to cool quickly. Combine wheat berries with the reamining ingreadients in a med. bowl. Toss to coat. Serve immediatly, or keep refridgerated 8 hours in advance. |
