This appetizer is a colorful and tasty prelude to a meal, or an accomaniment to drinks and conversation. Ingredients:
1 15-ounce can black beans, rinsed and drained |
1 4-ounce can chopped ripe olives, drained |
1 small onion, finely chopped (1/4 cup) |
1 clove garlic, finely chopped |
2 tablespoons vegetable oil |
2 tablespoons lime juice |
1/4 teaspoon salt |
1/4 teaspoon crushed red pepper |
1/4 teaspoon ground cumin |
1/8 teaspoon pepper |
1 8-ounce pkg. cream cheese, softened |
2 hard-cooked eggs, chopped |
1/4 cup finely chopped red bell pepper |
1 medium green onion, sliced |

Directions:
1. Mix beans, olives, chopped onion, garlic, oil, lime juice, salt, crushed red pepper, cumin and pepper. 2. Cover and refrigerate 1 to 2 hours to blend flavors. 3. Spread cream cheese on serving plate. 4. Spoon bean mixture evenly over cream cheese 5. arrange eggs on bean mixture in ring around edge of plate. 6. Sprinkle bell pepper and green onion over bean mixture. 7. Serve with tortilla chips. |
