From the Complete Vegan Kitchen Ingredients:
2 cups cooked black beans |
1 tsp oil |
1 tsp cumin |
1 medium onion |
2 tsp garlic, minced |
1 tsp chili powder (chipotle is best) |
2 tbsp lime juice |
2 tbsp cilantro, chopped |
Directions:
1. Mash/puree the beans, 2. Heat oil in a saucepan over medium hear. Add the cumin, onoin, and garlic, and cook until the onion just begins to soften. 3. Add chili powder, mix well. 4. Add the beans, chipotle, lime juice, and cilantro. 5. Add salt to taste, adjust the seasonings, and adjust the thickness with water. 6. Makes about 2 cups |
