This salad makes a meal for the two of us. Have ice cream for dessert (dairy) and you've got a well-balanced meal. =) Ingredients:
1/3 cup fresh lime juice (about 2 small limes) |
1/4 cup olive oil |
1 small clove garlic, minced |
2 cans black beans, rinsed and drained |
1 1/2 cups frozen corn kernels (or 1 small can, drained) |
1 avocado - peeled, pitted and diced |
1 red bell pepper, chopped |
2 tomatoes, chopped |
Directions:
1. Place lime juice, olive oil and garlic in a small container. Cover with lid and shake until well mixed. 2. In a salad bowl combine beans, corn, avocado, bell pepper and tomatoes. Shake lime dressing again and pour over the salad. Stir to coat vegetables and beans. |
