Great summer salad. Ingredients:
3 tbsp olive oil |
2 limes (juiced) |
1/2 tsp cumin |
2 cloves garlic |
1/4 tsp ancho chile powder |
4 ears of corn (grilled or boiled) |
1/2 can black beans (drained) |
1 red pepper |
1 lrg tomato |
1 cup fresh cilantro |
1/2 lrg red onion |
Directions:
1. Whisk first 5 ingredients in a small bowl. 2. Remove corn from cobs. 3. Dice/chop Pepper, Tomato, Onion & Cilantro. 4. In large bowl combine Beans and all vegetables. 5. Pour dressing over all and toss. 6. Salt & Pepper as needed. 7. Refrigerate for at least 1 hour. |
