Ingredients:
2 can(s) black beans |
1 pound(s) frozen corn |
1 bunch(es) green onions |
cilantro |
5 tablespoon(s) lime juice |
5 tablespoon(s) balsamic vinegar |
1 teaspoon(s) cumin |
Directions:
1. Rinse canned black beans of their sauce. (I use a colander) Pour beans and frozen corn into a bowl. Dice the green onions. chop the cilantro leaves. Add both to the bowl of beans and corn. In a separate bowl, mix together the lime juice, balsamic vinegar and cumin. Pour over the bean corn mixture. Refrigerate. I like to make a couple of hours ahead or more (even day before) so the dip has time to marinate and is good and cold. Serve with Scoops. (this also serves a good sized crowd. Sometimes for just the family I make half this recipe) |
