Black Bean Chipotle Chili Soup |

Serve with yogurt, avocado and slice of lime. Ingredients:
1 t olive oil |
1 onion, chopped |
4 cloves garlic minced |
1 cup diced carrots |
4 teaspoons cumin |
1 cup chopped celery |
1 red pepper, chopped |
1 t wine |
30 oz beans |
1 t diced pepper (chipotle) |
14 ounce tomatoes, undrained |
1/2 c orange juice |
6 cups water |
2 vegetable bouillon cubes |
1 salt and pepper to taste |
2 t lime juice |
Directions:
1. Saute veggies. Add everything else. Simmer until carrots are tender. Best to let sit overnight before serving. |
