Delicious, easy, healthy - for the slow cooker.
Ingredients:
1 tbs olive oil
2 onions chopped
2 cloves garlic minced
2 carrots chopped
1 jalapeno pepper chopped
1 tbs chili powder
1 tsp cumin
1 tsp oregano
1/4 tsp salt
1/4 cup tomato paste
2 28 ounce cans of diced tomatoes
2 cans black beans, drained and rinsed
2 sweet red peppers chopped
Directions:
1. Heat oil in skillet
2. fry ingredients up to salt in skillet over medium heat for 5 minutes
3. add all ingredients to slow cooker and cook on low for 6 hours
4. serve with any trimmings you like: cheese, sour cream, etc.
