Delicious, easy, healthy - for the slow cooker. Ingredients:
1 tbs olive oil |
2 onions chopped |
2 cloves garlic minced |
2 carrots chopped |
1 jalapeno pepper chopped |
1 tbs chili powder |
1 tsp cumin |
1 tsp oregano |
1/4 tsp salt |
1/4 cup tomato paste |
2 28 ounce cans of diced tomatoes |
2 cans black beans, drained and rinsed |
2 sweet red peppers chopped |
Directions:
1. Heat oil in skillet 2. fry ingredients up to salt in skillet over medium heat for 5 minutes 3. add all ingredients to slow cooker and cook on low for 6 hours 4. serve with any trimmings you like: cheese, sour cream, etc. |
