For a change of pace from your usual brown-bag meal, pack meatless burritos, commercial baked tortilla chips, and fresh nectarines. Ingredients:
1/2 cup canned black beans, undrained |
2 teaspoons salt-free herb-and-spice blend |
1/8 teaspoon ground cumin |
dash of ground red pepper |
1/2 cup cooked long-grain rice (cooked without salt or fat) |
2 green leaf lettuce leaves |
2 (8-inch) flour tortillas |
1/4 cup (1 ounce) shredded reduced-fat monterey jack cheese |
2 tablespoons minced green onions |
2 tablespoons no-salt-added mild salsa |
Directions:
1. Combine first 4 ingredients in a small saucepan, stirring well. Cook over medium heat, stirring constantly, until thoroughly heated. Stir in cooked rice. 2. Place a lettuce leaf on each tortilla. Spoon bean mixture evenly down center of each tortilla. Top each with 2 tablespoons cheese, 1 tablespoon green onions, and 1 tablespoon salsa. Roll up tortillas, and secure with wooden picks. |
