Veggie Burgers
Ingredients:
344 g cooked black beans, rinsed and drained
1 egg
27 g bread crumbs
1/2 tbsp olive oil, plus oil for greasing pan
55 g onion, diced finely
3 g garlic cloves, minced
18 g celery, sliced thin
1/2 tsp ground cumin
1/8 tsp salt
Directions:
1. Puree 86g black beans with egg into a smooth paste. Add to whole beans, along with bread crumbs, cumin and salt.
2. Fry the onion, garlic and celery until soft, add to the bean mixture. Mix together thoroughly.
3. Form into 6 patties, cook in an oven at 180c for 20 minutes, flipping half way through.
