My vegetarian friend made these and I got to try them. I thought they were delicious and am posting so I can make them for my family. Thanks Claire. Recipe adapted from Southern Living. Ingredients:
3 (16 ounce) cans black beans, rinsed and drained |
1 1/2 cups uncooked oats |
1 medium onion, diced |
2 jalapeno peppers, seeded and diced |
1/2 cup chopped fresh cilantro |
2 large eggs, beaten |
1 teaspoon salt |
1/4 cup all-purpose flour |
1/4 cup cornmeal |
1 tablespoon vegetable oil |
8 hamburger buns |
Directions:
1. Coarsely mash the beans with a fork or potato masher. 2. Mix together the mashed beans, oats, and next 5 ingredients. 3. Shape mixture into 8 patties. 4. Mix together the flour and cornmeal; dredge patties in flour mixture. 5. Let the oil get hot in a large non-stick skillet over medium-high heat; cook the patties for 5 minutes on each side or until lightly browned; drain on paper towels. 6. Serve on buns ( toasted buns work well). |
