This recipe is from the Jan/Feb. 2008 issue of Health magazine. I have not made it, but it sounds delicious. Ingredients:
1 chicken breast, precooked |
2/3 cup black beans, drained and rinsed |
1/2 tomato, cubed |
1/2 red bell pepper, chopped |
2 tablespoons scallions, chopped |
lemon juice, to taste |
1 dash cumin |
1 dash basil |
1 dash cilantro |
1 dash ground pepper |
Directions:
1. Cut precooked chicken into bite sized pieces. 2. Combine all ingredients in a small bowl. |
