Black Bean & Black-Eyed Pea Salad |

Wonderful cold salad - this dish doubles as an appetizer served with tortilla chips. Passed along through a family friend. Very easy to prepare-! Ingredients:
1/2 cup fresh lime juice (about 4 limes) |
1/4 cup olive oil |
1 teaspoon brown sugar |
1 teaspoon chili powder |
1 teaspoon grated lime |
1/2 teaspoon ground cumin |
1/2-1 teaspoon salt |
1 (15 ounce) can black beans, rinsed & drained |
1 (15 ounce) can black-eyed peas, rinsed & drained |
1 1/2 cups frozen whole kernel corn, thawed (fresh works well too) |
1/3 cup chopped fresh cilantro (can do more or less to your taste) |
1/2 small green pepper, chopped |
bibb lettuce |
Directions:
1. Whisk together the first 7 ingredients in a large bowl. 2. Add black beans and the next 4 ingredients, tossing to coat. 3. Cover and chill at least 30 minutes. 4. Arrange lettuce around salad. |
