Oxygen magazine, Spring 2009 Used Soy black beans and cherry tomatoes - not exactly right on counts but close - 1/2 cup serving Ingredients:
4 roma tomatoes, chopped |
1 small red onion, chopped |
1/2 cup fresh basil |
1 tsp. lemon juice |
1 tbsp. white balsamic vinegar |
1 cups black beans, s&w brand, 50% less sodium, rinsed and drained |
1/2 cup avocado, peeled and chopped |
1/2 tsp. chili powder |
1/4 tsp. cumin |
Directions:
1. Combine all ingredients and chill |
