Black Bean Asparagus Salad |

Ingredients:
2 can(s) 15 oz. black beans, rinsed and drained |
2 pound(s) fresh asparagus, trimed and cut into 1 pieces |
1 lg. sweet red pepper, chopped |
2 tablespoon(s) lime juice |
1 med. onion chopped |
1/4 cup(s) olive oil |
1/8 teaspoon(s) salt |
Directions:
1. in large pot bring 1 1/2 inches of water to a boil. Add asparagus; cover and boil for 3 minutes. Drain and immediately place in ice water for 2 minutes. remove from ice water and pat dry. 2. In a large serving bowl, combine the asparagus, beans, red pepper, and onion. In a small bowl, whisk the oil, lime juice, salt and pepper together. Pour over vegetables and toss to coat. cover and refrigerate for at least 2 hours before serving. |
