Black Bean and Two-Cheese Quesadillas |

A nice, low calorie vegetarian quesadilla! Ingredients:
1 cup cooked black beans |
1 seeded chopped tomato |
1 seeded chopped roasted red pepper |
1 minced garlic clove |
1/2 cup chopped fresh cilantro or 1/2 cup parsley |
2 tablespoons chopped fresh chives or 2 tablespoons green onions |
2 tablespoons shredded fresh basil |
1 1/2 cups grated light monterey jack cheese or 1 1/2 cups cheddar cheese |
1/2 cup crumbled goat cheese or 1/2 cup feta |
6 whole wheat tortillas (10 inch) |
Directions:
1. 1. In a bowl, combine all filling ingredients. 2. 2. Lay tortillas out on a flat surface in a single layer and spread filling evenly over half of each tortilla. Fold unfilled half of tortilla over filled side and press together. 3. 3. Grill quesadillas for 2 to 3 minutes per side, or until lightly browned. (You can also bake them in a single layer on a sheet pan in a preheated 400 F oven for 7 to 10 minutes, or cook for a few minutes per side in a lightly oiled non-stick skillet or grill pan). |
