Black Bean and Turkey Stew |

quick, easy and tasty-great for a person who is busy, but still wants a healty meal for their family. Ingredients:
3 (15 ounce) cans black beans, drained and rinsed |
1 1/2 cups chopped onions |
1 1/2 cups reduced-sodium fat-free chicken broth |
1 cup sliced celery |
1 cup chopped red bell pepper |
4 garlic cloves, minced |
1 1/2 teaspoons dried oregano leaves |
3/4 teaspoon ground coriander |
1/2 teaspoon ground cumin |
1/4 teaspoon ground red pepper |
6 ounces cooked turkey sausage, thinly sliced |
Directions:
1. Combine all ingredients in slow cooker, except sausage. Cover; cook on LOW 6 to 8 hours. 2. Transfer about 1-1/2 cups bean mixture from slow cooker to blender or food processor; purée bean mixture. Return to slow cooker. Stir in sausage. Cover; cook on LOW an additional 10 to 15 minutes. |
