Black Bean and Tomato Salsa |

This is from the Spring 2003 edition of Eating Well. Ingredients:
2 cups seeded diced plum tomatoes (6-7 tomatoes) |
1 (19 ounce) can black beans, rinsed |
1/4 cup chopped scallion |
2 tablespoons chopped fresh cilantro |
2 tablespoons lime juice |
1 tablespoon extra virgin olive oil |
1 -2 teaspoon minced canned chipotle chile in adobo |
1/4 teaspoon salt |
Directions:
1. Combine all ingredients in a bowl and stir. |
