Black Bean and Sweet Potato Chili |

From Cottage Living Magazine 1 serving = 1 cup Ingredients:
2 tbsp olive oil |
1 large yellow onion |
1 red bell pepper, chopped |
1 green bell pepper, chopped |
2 jalapeno peppers |
3 cups (2 medium sweet potatoes) |
3 cloves garlic |
3 tbsp chili powder |
2 tsp salt |
2 tsp ground cumin |
1 tsp pepper |
1/2 tsp crushed red pepper |
2 tsp basil |
1/2 tsp marjoram |
28 ounce chicken broth, fat free |
30 ounce black beans |
2 tbsp lime juice |
Directions:
1. Heat oil in heavy large saucepan or Dutch oven over medium-high heat; add onion 2. Reduce heat to medium and cook, stirring occasionally, about 10-15 minutes until tender 3. Add bell peppers, jalapeno and sweet potato 4. Cook, Stirring occasionally, about 5 minutes 5. Stir in garlic and cook about 1 minute 6. Add chili powder and next 6 ingredients and one bay leaf 7. Stir and cook 1 minute 8. Add tomatoes and broth 9. Simmer, uncovered, about 30 minutes 10. Stir in beans and continue to cook 10 minutes 11. Remove bay leaf and stir in lime juice 12. Garnish with cilantro or green onions, if desired |
