Black Bean and Salsa Soup |

A easy, hearty and spiceful soup. Great way to brighten up a cold & dreary day! Ingredients:
45 oz. black beans |
5 cups chicken broth, low sodium |
1 cup chunky salsa |
2 tsp. ground cumin |
15 oz. diced tomatoes, no salt added |
1 1/2 lbs. chicken breast, boned & skinned |
1 tbsp. olive oil |
Directions:
1. Place the oil in a non-stick skillet and heat over medium-high heat. Dice the chicken breast and saute until no longer pink. 2. Drain and rinse beans. Place 1 can in a blender along with 1 c. of the broth and puree. Place in a stock pot or dutch oven along with the remaining beans, salsa, canned tomatoes and cumin. Add the chicken and heat until heated through. |
