Veggies and spices complimenting eachother with rice Ingredients:
3 tomatoes, chopped |
1 red bell pepper, chopped |
1/2 c lemon juice |
1 c cilantro, chopped |
1/2 tsp. basil |
1/8 tsp. red pepper flakes |
1 15 oz. can whole kernel corn, drained |
1 15 oz. can black beans, drained |
1 tbs. olive oil |
1 onion, chopped |
1 clove garlic, pressed |
3 cups brown rice, cooked |
salt and pepper to taste |
6 tbs. salsa |
Directions:
1. In large bowl, combine tomatoes, bell pepper, lemon juice, cilantro, basil, red pepper flakes, corn and beans. 2. mix well and set aside 3. In a medium saucepan, heat olive oil over medium low heat. Add onion and saute' until translucent. 4. Add Garlic and saute' for another minute, then add to the tomato mixture 5. now combine the rice and the veggie mixture, salt and pepper to taste. 6. top each portion with a tbs. of salsa. |
